Whipped Banana Oatmeal Sucess

I'm always drooling over Kath's endless varieties of oatmeal.  Whether overnight oats or smoothies, each recipe is an oat-fruit-granola-nut butter blend of deliciousness.  I haven't loved the overnight oats I've made.  I definitely didn't use enough liquid, and it was frankly just too heavy for me.  I woke up Saturday morning with the urge for oatmeal, so I took a stab at Kath's whipped banana oatmeal.  I was successful, and I LOVED IT.

Instead of adding oats to boiling water and cooking as usual, this method calls for combining oats and water (and/or milk) with thinly sliced banana and bringing them all to a boil.  (I threw in some chia seeds as well.  Can't get enough of these babies.)  Once they begin heating up, you constantly stir/whip until it's a creamy, blended pot of wonder.  The bananas melt into the oats for a wonderful balance between smooth and chunky.  It was my ideal meal.

I topped my bowl off with a few extra slices of banana, sunflower butter, and (unsweetened) coconut shreds.

I ate outside until I realized that the chair cushion was still wet and had soaked my shorts through!  Oops.

The perfect bite!

I made a double-batch of this but with just one banana.  I promised myself that I wouldn't pick at the leftovers once they were cold in the fridge.  Naturally, I ate almost the entire serving after Saturday night's festivities and then finished it off at about 5am when I woke up starving.  C'est la vie.
